We had some friends visiting from italy recently who brought us all sorts of lovely regional treats, including local salami. They told us NOT to put it in the refrigerator, because "it doesn't taste good cold". So, we left it out for a while but now we've opened it...I can't imagine we *still* keep it out. Do we? And either way, how long will it keep? This is the kind that''s slim and wrapped in a moldy cheese-cloth with string. NB: We've kept the cloth on. Anyone out there have advice for us? To chill or not to chill...?
