Salad or Veg. with Brunch Menu

Hosting a brunch for the first time this weekend (for 8 persons). On the menu so far are a prosciutto with goat cheese strata and roasted lemon potatoes. Guests are bringing bread/muffin, juice, and dessert/fruit of their choosing. Would welcome suggestions for a vegetable and/or salad to include. Would prefer simple preparation as have enough stress already. Thanks for the help.
