Salad to go with Blood Orange Glazed Tofu?

I'm putting together a vegetarian (not vegan) menu for Christmas dinner. There will also be turkey on the table for the meat eaters, though I am not sure how it will be prepared.

My menu so far (links below): Blood Orange Glazed Tofu, Pumpkin and Cranberry Risotto with Chestnuts, and Mashed Sweet Potatoes with Brown Sugar and Pecans.

I would like to add a salad, either chopped or green, and possibly another vegetable side dish, to offset the sweetness and smooth textures on the menu so far. I was thinking a nice green salad with apples, pecans, and bleu cheese, but I am open to all vegetarian suggestions*. If I do go with the apple pecan green salad, what varieties of apple do you suggest?

* other dietary limitations are no mushrooms and no tomatoes (or at least not tomato as an inseparable component.
