Sage and Wildflowers Raw Honey by Acosta Honey Farms in Salinas

Yesterday at Farmers Produce in North Salinas I noticed stacks of honeycomb in boxes as well as jars of honey near the entrance. Labeled as Grade A Raw Sage and Wildflowers Honey, the contents of a pint-size jar weigh 24 ounces and cost $7.50. That’s a good price, less than half what I’ve paid for raw, local honey from other producers. The beehives are located in Carr Lake in central Salinas.

The flavor is quite deep and complex with floral, citrus and woodsy tones. The sage character comes through as a savory back note in the finish. Tasted side-by-side with some honey produced in the Almaden Valley, Acosta’s makes the other taste quite bland. Packaged in a Mason jar, one car put this jar in warm water to liquefy with confidence. Here’s the package.
