Sage roasted chicken

My mouth was watering reading the recipe and viewing the picture of sage roasted chicken. I was wondering if you think it would be OK to use both sweet and white potatoes, as not everyone who will be eating the chicken likes sweet? I understand(assume) that the sweet imparts a particular flavor to the gravy, so I would include it, but for eating purposes I'd like to use white as well. Any thoughts?
