Running out of exotic foods to try.

My husband and I (both former chefs) are always on the look out for strange and exotic cuisine. In recent months we have tried the following: Greek, Thai, Spanish (mexican, puerto rican, and actual spain(ish)), Filipino, Korean, Japanese, Ethiopian, Chinese (from several regions) French, Costa Rican, Italian(several regions, my husband is Italian/Sicilian, and we just recently returned from the Cinque Terre area of Italy for our honeymoon), soul food, Indian, Pakistani, German/Austrian, Swedish, Polish, Palestinian (whew) I think I've covered them all. But! Does anyone have any suggestions for restaurants in the Western Suburbs or the greater Chicagoland area which are worth the trip!.
