I baked Rugelach on a Wednesday evening and had to transport it on a Friday morning--my destination was approx. 8 hours away and this party was in July temp was 75-80 degrees when it would be served in the afternoon. Wondering if I should have either refrigerated or froze the baked Rugelach (once it had cooled) for the lengthy trip up--in our air conditioned car. it had an egg wash on it and also 1 egg yolk in the dough--it had a nut-honey filling and also some had a raspberry jam-dried apricot filling--also should I have kept this in a cooler or insulated bag with ice while traveling up--whether it had been frozen or not. I kind of hated to freeze it not long after baking--just wondered if traveling in some heat would bother it or make it unsafe. I'm not really sure if or how you should keep baked goods on ice while traveling. If so which ones need it. Thanks for your input
