We ate at Swallow at the Hollow, on Green Street, a couple of times when they first opened and weren't all that impressed. We had not eaten there in at least two years. Thanks to several Chowhound posts, we went back Friday evening. My daughter was home from college and she loves ribs. I generally don't order ribs. They usually have too little meat to suit me and they are very messy. Several Chowhounds have mentioned the ribs very positively, so my daughter and I each order a full rack, and my wife ordered her usual chopped pork plate.
The ribs were absolutely the best I have ever had (bear in mind I have very little experience with BBQ ribs), the sides - I had baked beans and brunswick stew - were quite good. These were the meatiest ribs I have ever seen. I have considerable experience looking at the ribs my daughter frequently orders. My wife termed her chopped pork plate as decent. My daughter and I each took home about a third of our ribs.
Service was slow, but pleasant and sincere - not the least bit agravating. The place was very crowded. We arrived around 8pm and the live music begins at 10pm, so we left as soon as we finished eating.
