Went to Maverick Square yesterday in hopes of finding Taqueria Cancun open in their new larger digs, but alas the delays of opening a restaurant. Ended up at Rosticeria Cancun(where I believe the owners of TC started and then moved a few doors down). Went there for a late breakfast and ordered Tacos de Lengua and Chicharron and Queso Pupusas. The tacos were delicious after just a small squirt of limejuice and some hot sauce, with juicy chunks of beef tongue that were cooked just right(not overly braised and not underdone but just right). Lots of cilantro and chopped onions on warm crispy/soft tortillas(they wrap them in two, the outer one gains some crispness from the griddle and the inner one stays nice and soft and slightly chewy. The pupusas left me wanting for Taqueria Cancun's version. The shredded pork was not all that flavorful and I would have liked more cheese. The dough was acceptable and was crispy in some places and soft in others. The pupusas I have had at Taqueria Cancun have been excellent, stuffed with lots of pork and cheese, usually leading to a couple of leakers which lets the cheese ooze out onto the griddle and form lots of crispy crunchy gratin goodness, looks like I'll have to wait for those. The front of Rosticeria Cancun has about 8 stools and is no larger than 5x9, they were doing a brisk Salvadoran Desayuno takeout at 11am on a Sunday...big brown bags with lots of food being picked up.
