Rolled Edge or Open Edge // Turners

Outfitting a new weekend getwaway house. Many things I know what to buy. Many revisiting when it comes to utensils, etc

What camp do you fall in. Rolled edge or open edge (for all utilitarian thins like sheetpans to prepbowls).
I've picked up open edge pans in the past - in my mind no gunk builds up inside. The manuf finishing on them is terrible. Literally stamped out with no finesse. I had to run a sander on the edges as it was that rough...

Anyhow, just thinking outloud tonight. Any preference on turners as well. Leaning on the large Mercer slotted and just a heavy weight Lamson. Always have bought lamson turners forever. I cant keep track of the every changing company names - owners though . Lamson sharp, then lamson goodnow, now it's just Lamson.
