roasting garlic

oh dear. I tried to roast garlic for the 1st time last night and wasn't sure how soft it was supposed to be when it's done. I roasted it for an hour as suggested by the Silver Palate cookbook, and while the cloves softened, they still taste a little bitter. Since I've already taken out all the cloves and pureed them (originally thinking that maybe that's how they should taste), is it at all possible to put the mixture in a small dish and back in the oven for awhile to try and get them sweeter or should I just toss it all into the garbage? thanks in advance.

ps. I wanted to use the roasted garlic to make garlic puffs with puff pastry.
