Roasted Vegetable Tapas help needed

I want to do a combination of roasted and grilled vegetables with Romesco sauce for a tapas party. I will be bringing the dish to a friend's house so it will need to be prepared ahead of time. I also plan to serve the romesco sauce on the side in a bowl. How can I serve the vegetables without them being soggy? Thanks
