I am making a loaf of French Bread in my Bread Machine and was wondering if I add cloves of garlic to it during the final knead if it will affect the final rise ?? It says if making raisin nut bread that this is the time (1/2 way through the final knead) to add but maybe I could just add them by hand after the final rise and before baking. I am asking because I have heard that cinnamon and garlic can reduce the final rise of glutens in breadmaking. Does anyone have experience in this, I am not a beginner but a learning novice. If worse comes to worse it is trial and error I guess.
