roasted chickpeas

I just found a basic recipe for chickpeas roasted for 20 min at 400 F in olive oil, salt and pepper, and am intrigued, esp. as I have 3/4 of a can of chickpeas in the fridge. Are they crispy, or crunchy, or hard all the way through when they come out, or do they maintain some creaminess? Any experience hounds have with favorite herb seasonings, flavor combos, and serving suggestions would be appreciated.
