Roasted Chickpea and Kale Salad With Sun-Dried Tomato Vinaigrette

I made this last night and thought it was terrific. I thought the chickpeas were a bit too crunchy but Bob thought they were perfect. I didn't have any parsley and subbed cilantro which is always fine with us. I also didn't have any mint and I know it will be better with that. I also like that it can be made ahead of time. We'll be having leftovers tonight. Highly recommend.
