The other day, we meandered over to 2nd street in midtown to an American brasserie called The Smith. We whistled up the Monday night special: "Crispy Pork Roast with Chanterelle Mushroom/Squash Risotto." At first bite, I"d died and gone to heaven; OMG.. what a dish: pork shoulder stuffed with sausage (I wrested from the waiter that it has coriander in it). The shoulder was wrapped in pork belly with an indescribably perfect crisp on the top. The fat seemed to be injected with an herb, perhaps. Crazy good.

I liked it so much, I'm trying to create it in my kitchen for Christmas dinner. Anyone know any kitchen-types who work there (there are 3 Smiths in Manhattan)? I"d really like to get my paws on that recipe.
