I need a roast beef poboy

I don't know if it's PMS or what, but it's all I can think about. I'm about to cross the state line into Louisiana just to get one. I've tried a few around town, but no one seems to do it right. I want hot roast beef, hot gravy, mayonnaise, lettuce, tomato, and pickle. On semi-crusty bread. And the gravy and the mayo has to come out of the sandwich and make this insane mess which is good for dipping french fries into.

I went to Sambet's, where they put provolone on it. Other people don't make it hot or only offer cold gravy on the side. Who eats cold gravy?

Can anyone help a girl out? Is there a place around here that can manage this or should I just make a poboy at home for the first time in my life?

Also, I'm looking for a place with good gumbo. Again, went to Sambet's and they had, I swear, oregano in the gumbo. Blasphemers.

I never get homesick for NOLA until I think about the food.
