Roadfood/off highway good eats: (St. Louis, Tulsa/OKC, Tucumcari/Amarillo)

I'm driving from Chicago to Las Cruces, NM, and I am looking for good eats easily accessible from the major highways (I-55, 40, and 44) about halfway through my days (hopefully two-day trip, with luck).
Thus, I expect i'll be ready to eat lunch around St. Louis (but I don't want to go into the city at all, so some town near it would be great as well) the first day.
That night I expect to wind up for dinner around Tulsa or OKC.
The next day, for lunch i expect to hit Amarillo, or, if i want to drive a little further, Tucumcari, NM.
Or maybe i'll make it all the way to Albi--any help is appreciated.
One note, if I may, I don't want to eat at any steakhouses--I'm not vegetarian by any means--i just don't want to eat a huge steak on a road trip by myself.
I know this is a tall order--and I appreciate any help I may get. Thanks.
