Road Trip - What's in the Ultimate Cooler?

OK so here's the deal. Myself, Michael & some friends have rented a minivan and we are driving to Baja (Mexico). It got me thinking about all those road trips my family took when I was a child. I have now vowed to pack the ultimate cooler - some classics that my Mom made (pimento cheese sandwiches), some things Mom always refused to provide (unlimited pixie sticks), some new stuff that travels well (organic fruit, roasted eggplant dip from farmers market).

Here's my question to you...what would be in your ultimate cooler? The reason I posted it on the SF board is because I'll need your sources for ingredients, prepared products and produce.

Lastly, if there is any place we should stop on the way, let me know.
