Rize Up Sourdough & The Butterfly Joint Cafe | Outer Richmond - San Francisco

In September I stopped by Hakka Restaurant https://www.chowhound.com/post/chef-c... to pick-up a to-go order. The brightly painted storefront and sidewalk seating next door seemed new. Indeed, The Butterfly Joint, a new cafe, had been open for less than three months. I noticed the poster offering Rize Up bread on Wednesdays and Sundays. Though I'd missed the closing time of 2:30pm, I called through the open window to ask if any loaves were still available for sale. The cafe's owner greeted me and offered me a choice of the regular sourdough, $12, or the garlic confit with thyme loaf, $15. These are the same prices as buying direct from the bakery. I opted for the garlic version. In addition to Rize Up, she is making an effort to feature other local products as well, such as Devil's Teeth baked goods.

This was an exciting find, as I've been reading about this start-up baker and wanting to support a black-owned venture. https://www.hatchcard.com/blog/meet-t... However, not being organized enough to place an order for pick-up or delivery in SF, I'd not had a chance to try the product.

Made with organic flour, the sourdough has a mild, natural-tasting tang and a bouncy and moist open-knit crumb with plenty of voids. The crust was crackly and not that thick or hard enough to scratch the roof of the mouth. The cloves of garlic confit were still on the firm, almost crunchy side, enhanced by the fragrance of thyme. Though enjoyable, I would probably opt for the plain sourdough and not pay the upcharge for a flavor option. The elevated hydration bread held up very well for four days on the kitchen counter. When it started to stiffen up after that point, I sliced the rest of the loaf and then toasted to revive. It's a well-made sourdough and I'd buy it again. The price is a bit steep but it did heft like a 24-ounce loaf.
