For several years - and without having even tried it - I could not understand what all the fuss was about when it came to risotto.
Until last night.
I made my first risotto and now I understand.
My organic produce delivery service had brought me some shiitake mushrooms and garlic, and the newsletter they always put in the box gave the mushroom risotto recipe. I followed the recipe exactly, except that, dh does not like parmesan, so I subbed it with 1 tbsp of butter. That is a keeper! (probably a basic recipe, though, so I won't post it here)
I accompanied with pan-fried salmon and a watercress salad with grapefruit, oranges and kiwis (in a lemon juice, maple syrup and olive oil vinaigrette).
Great meal, ready in half an hour, and my first risotto!!!
Tonight, I'll make risotto croquettes with the leftovers...
