Just read another post regarding Risotto and got me really in the mood for it. I'm planning a dinner this Saturday for friends who are staying with us, and want to make something special. 8 diners including 4 kids ranging from age 4 to 10, with some of the diners being vegetarian. I'd like to make a great risotto, which would be easy to satisfy the vegetarians with a side salad, but would like to consider pairing it with some sort of protein to round out the meal. Any suggestions?
