I am a risotto junkie. Where can I get a fix?
Restaurant risotto tends to be a bad gamble. Most often I find it just okay, sometimes terrible. Only rarely do I find something equal to or greater than "this is good, I'd order it again".
Right now I'd say the best I've had is at Bacco, one of the very rare places I ever order risotto more than once. During the most recent truffle season they were serving white truffle risotto. It was divine. Creamy and rich, with an almost overwhelming profusion of white truffle (read: I'm in heaven) . Yet despite it's richness it was not leaden, the most common offense committed by risotto. This one was like a male ballet dancer: powerful and strong enough to throw grown adults through the air, yet light and graceful on its feet. I devoured every morsel in the large portion I was served.
