I bought quince last week to make a lamb recipe a chowhounder posted here for me. It's kind of an expensive special recipe for me to make and I want it to be GREAT! The markets don't seem to have RIPE smelly quince this year so I bought some green ones hoping they would get better... I stuck them on a windowsill but so far only one of four has any aroma.
I know Irwin was trying to ripen some quincey-type fruit a few days ago in a paper bag with a banana. Were you succesful?
