I never know how long to soak rice noodles, usually because when I buy them they have no instructions in English. Years ago I tried boiling them- once it worked, usually not so well. Then I tried hot tap water, with mixed results, then i quit doing it for a long time. I just poured boiling water over a bag of rice vermicelli- how long does it need to soak?
Also, what's the best way to keep it in the fridge? The best success I had was putting a paper towel under it in a bowl and covering with cello wrap, but with my luck it could easily have been a fluke.
