I'm making this thai buffet tonight and i want to make a cold noodle dish with peanut sauce. I found a hot dish that i think will be good cold, but it calls for rice noodles, and i have never used them for a cold noodle dish, i've only used the chinese egg noodles. So, if i cook rice vermicelli and dress it with the sauce ahead of time will it hold up and taste good or will it fall apart or get gummy or something else horrible? I can substitute chinese egg noodles if i have to.
