When I was growing up my grandmother made rice knishes. The filling was just rice and something to hold it together. It was a little sweet and may have had cinnamon in it. The wrapping was thin and flakey. ( she used the same dough for her kasha knish). After they were baked, she would fry them in a little butter. I never had a heavy dough wrapped potato knish until I was an adult.
Does anyone have a recipe that would come close to this. I thought of using phyllo dough, but I need a filling.
