Rib Expert Needed

About a year ago I was eating in a North Florida restaurant, whcih has since closed, and ordered what was called a "Fillet of Baby Back". The pitman told me the racks were available in 8/10/12 bone sizes and weighed about 3 1/2 lbs!! The rib was outstanding, a little pricey, but well worth the money considering the amount of meat on the bone which sat up about an 1 1/2". I got a phone number from the restaurant and called The Ribman in the midwest and was told that the rib was not currently being cut. Production may be started again when precessing plants are licensed to produce "The Fillet of Baby back". Does anyone know of a product that sounds like this and is available in a restaurant?
