Is it best to shave off the outer layer of the stalks to make them more tender when cooking? What are your favorite recipes?

    Rhubarb does not need to be peeled - that would just be a waste. It's not like big ribs of celery, for which stringing can be a help. Rhubarb cooks down to tender without peeling.
