Rhubarb will be coming into season here in the northeast. I don't have much of a sweet tooth so any ideas or recipes for rhubarb that are not desserts?
I love it in salsa. Got some other ideas here.

I've only tried salsa and BBQ sauce; but my next move is to boil it down with peppers and onions for a pepper sauce.

I don’t generally like rhubarb, but i remember eating out (somewhere in nyc....can’t recall!) and there was a little side garnish of pickled rhubarb that was fantastic, not sweet at all. I think it was a quick pickle, not fermented.
You could slice diagonally, and saute w/ celery & shallots as a veggie side.
