planned on making rhubarb crisp for party tonight - suddenly noticed that recipe has no sugar mixed with the rhubarb - can this be? i've never cooked with rhubarb before but isn't it quite tart? Should i take some of the sugar from the crumble topping and mix it into the rhubarb? recipe describes the rhubarb as "compote-like." emergency advice needed. recipe is paraphrased below:
About 2 lb of rhubarb stalks,
1 cup of white sugar
1/2 cup of raw or light brown sugar
4 oz. butter
3/4 cup of white flour
Wash and cut up the rhubarb stalks into 1 inch pieces.
Melt the butter, and add the flour and sugar. Mix to make a rather crumbly mixture.
Put the rhubarb in a pie dish. Cover with the crumble mixture. Bake for 35-40 minutes, until the crumble is browned and crispy.
