Revisiting Slow Cooker Caramelized Onions

I think this has been covered quite a bit but I have discovered something new in quite delighted with and I discovered it by accident.

I bought a bag of chopped onions from smart&final, a convenience item I would normally never bother with except I have a new baby and this seems like a great corner to cut.

Except the bag made my fridge smell horrible only a day later. Wow. Not a great smell to hit you in the face first thing in the morning.

So I got out my new slow cooker that has the stovetop safe insert. It's cast aluminum I think and resembles cast iron in some ways but much lighter. I heated butter and sautéed the onions on high for a few minutes before dropping the insert into the appliance to finish cooking slowly the way they're supposed to.

It's coming along beautifully so I wanted to share.

This slow cooker runs pretty hot but I think that helps these onions not be soggy and gross.
