Restaurants that set the standard for Creole dishes

I will be visiting New Orleans for five days next month, and I would like to focus on eating the best renditions, classic or modern, of some Creole dishes so that I have a good frame of reference for cooking them at home. Where should I go to taste the following dishes?

Etoufee
Gumbo
Jambalaya
Shrimp and grits, and grits and grillades
Boudin

I probably can't make turtle soup, but I'd like to try that as well. Are there any other dishes that you would recommend?
