Restaurants and Lodging in Bruges

Hi--

I'm going to be in Paris during April and May, and I'm going to make a three or four day excursion to Bruges on the Thalys TGV.

I'm in the market for an incredibly comfortable and luxurious lodging just for me alone for about 45 Euros. Hell, I'm cheap, so the 45 Euros is the serious part of that last sentence. I like B & Bs and the kind of accommodation that people are compelled to call quaint or cosy. And I want to be near the center.

I'm already zeroed in on mussels and frites with mayonnaise of a goodness unimaginable to the habitues of Leon de Bruxelles.

But I don't know a thing about Flemish gastronomy. What should I not miss trying? And what washes down good with a schooner of De Landtsheer NV, Duvel Moortgat NV, or Sint Jozef? And what beer would you drink above all others?

And can anyone tell me where to eat and drink these Flemish wonders? I don't mind if my attempts at speaking Nederlands are ridiculed.
