Going to Israel mid March and one of the travelers has a severe allergy to tree nuts and sesame. Need upscale restaurants that make things from scratch and know their ingredients. Looking at random restaurant menus, everything is tahini and tree nuts all over the place. Street food is out of the question.
When we travel steak houses and Italian restaurants seem to rely less on nuts and sesame, but in Israel that doesn't seem to be the case. Ethnic places like Israeli, Indian, Chinese, Turkish are full of sesame and nut dishes and need to be avoided.
Staying in Tel Aviv and Jerusalem and Safed. Kosher not a necessity. Places open near Safed on a Saturday also needed. We've avoided coming to Israel because of the allergy for a long time, but now we are venturing forth.
