Help! Restaurant suggestions for large group (15-20 ppl)

A large group of friends are going to Vegas for the weekend later this year. For a lot of us, it will be our first time there and for our first night there together, we are wanting to have dinner together. I noticed a lot of the restaurants are referring you to their sales manager to reserve a table for our group size, which means someone in our group will either have to put down a deposit or we have to meet the food/drink minimum on their pre-fixed group menu (nearly $100 per person). In our group, we have quite a few (nearly half) with special dietary needs, so a pre-fixed group meal would not go well for a few (For example - spending $100 for just bread & salad & veggie sides won't go well for my vegan/vegetarian friends at some places). Anyway, is there a restaurant (preferable on the strip or nearby) that would accommodate our group and allow us to individually pick/pay for our own meals?
