Restaurant recs for a LA/OC Chowhound for 2 days

Hello Vancouver hounds,

My wife and I are from the Los Angeles and Orange County area and will be in Vancouver for two days from January 6-8. We will be staying at the Sheraton Wall Centre in Downtown and will NOT have a car. Planning on taking public transportation while we are in your beautiful city. Hopefully the weather behaves somewhat.

I have been searching the boards and noticed that most posts are for Chinese cuisine and Japanese Izakayas. Is this what Vancouver really excels at?

We are fairly adventurous eaters and open to any and all cuisines. Not looking for any restaurants that will break the bank but reasonably priced and delicious. Looking for must eats while we are here. Where you take out of town guests?

Here are a few places that we had in mind after looking through the posts:

Ramen Santouka - We have an outpost in Orange County. Is this the best ramen in the city?
Izakaya Guu and Garlic - best choice for an izakaya?
Gyoza King - Worth going too?
Richmond Public Market - Xian and Alvin Garden
Crystal Mall - Wang's for XLB and Huaxi

Any places you would say that are musts or that should be removed from this lists?

Any recs for New American - Farm to table type restaurants or any non-Asian recs.

Any Sushi recs? How is the sushi scene compared to Southern California?
