Pastries from there today amazed me. I don't remember the last time I threw away dessert! I had the almond/frangipane fruit bar: a heavy moist cake (?)with what I was told was apricot preserve between the layers decorated with a few slices of flavorless strawberries and a berry. Way too sweet and otherwise almost flavorless. I had a taste of a cream puff filled with, yes, whipped cream (ok so far) in a tough, tough, hardly crisp shell drizzled with so little chocolate that it contributed nothing. This balanced the fruit bar, because it had no sugar in it to speak of. The third was a too airy chocolate mousse distinguished only by a thing film of dark chocolate on the top that made this the best of the three, but nothing I'd go back for.
Is this consistent with the experience of others? Or did I hit a bad day. I'm sure the student chefs must rotate.
