I'm going to a nice restaurant tonight, for which I've seen chowhounds and other reviewers say things like, "put yourself in the chef's hands" and "give (Mr. X) free rein." I'm more than happy to do that, and will eat anything the chef wants to make. But... this may sound like a stupid question, but how exactly do I do that? What words do I say to which person to get this across and not sound like an idiot (or as demanding, or anything else off-putting)? Is there anything else I should be expecting, like, will the chef come out and ask us something and if so, what should we say in response?
