I've done my research and now need help on first time trip to Spain, March 2019, Barcelona, San Sebastian/Bilbao, and Madrid o

We are planning the trip for the middle two weeks in March. We are pretty adventurous in our culinary adventures. I do not drink alcohol but that is our only restriction.
I am looking to have a splurge in each city and have a sense of the local food scene. We would like to do the usual tourist experience, so eating might be combined in a neighborhood if that is possible. We are not afraid to hop on the subway or grab an Uber to find a meal. So far I have booked Disfrutar in BCN and have booked a pinxto tour in San Sebastian for our first night there. OK now on to the specifics...

1. We will land in BCN fairly early on Sunday, so we will need some place to get a lunch and or dinner on a Sunday. Our hotel is near Sants but we can travel (and we will have lots of time before check-in).
2. We plan to go to Figueres to The Dali Museum on Tuesday. Is there some nice place for lunch there or should we head back to BCN for late lunch?
3. While in San Sebastian, we plan to go to Bilbao to the museum on Sunday. Looks like a lot of places close at 4pm. Again, lunch in Bilbao or find a Sunday place in SS?

Here are the places I am favoring in BCN - Gresca, Teoric, Viana, El Quim de la Boqueria, La Gormanda, Mano Rota, Topik, Xavier Pellicer, Suculent, Blavis, and Espai Sucre

In SS - Agorregi Jatetxea, Borda Berri, Restaurant Ni Neu, Restaurante Saltxipi, Ikaitz, Fabrica, Xarma, Bodegon Alejandro

Bilbao - Cafe Iruna, Porrue, Restaurant Al Margen

Madrid - Lakasa, Hortensio, Marcano, Astor, Enklima, Nakeima, Moratin Vinoteca Bistrot

What I am mostly looking for is a good meal at a good value. I am willing to go high end but prefer to keep most meals to a reasonable amount of money. I expect a lot of great seafood and some Catalan cuisine in BCN, Basque food in SS/Bilbao, and maybe a mix of all that in Madrid.

I appreciate all the great advice I get on Chowhound. It is really the best source for recommendations when planning a trip. Thank you Chow community
