Yet Another Request for Light Lunch Advice--Ravenna, Ferrara, Mantova

In the course of our longer trip to Italy we will be staying four days during late October in Bologna, using it as a base for day trips to the above cities. Based significantly upon research on this board, we have dinners reserved at Trattoria da Amerigo (Savigno), Trattoria la Rosa (Sant' Agostino), Trattoria Serghei and Ristorante Caminetto D'Oro. As I hope and expect these all to be very substantial meals, I am looking for suggestions for delicious, lighter lunches in each of the cities we'll be visiting. Something that will permit flexibility to focus upon salads and antipasti, and offer a good glass or two of wine as well. Thankyou all in advance for your advice.
