Repurposing peppery, sweet pork chops

This weekend I made slow cooker pepper pork chops following this recipe from Alton Brown:

They came out great! But we're a bit tired of eating pork with mashed potatoes, so I'm trying to think of a way to repurpose the remaining meat. It's essentially shredded pork at this point, with plenty of the cooking liquid and onion and apple mixture left. It's got a nice peppery taste but is not overpowered by the pepper; it's also sort of sweet from the apples. I also have a small amount of gravy that I made with drippings and a roux (unfortunately, the fiance didn't care for the gravy because it concentrated the sweetness of the cooking liquid; I could take it or leave it).

So, what would you do with it?

In case this sparks inspiration, some other ingredients that I'm looking to use up in the next few days: sweet corn on the cob, cherry tomatoes, green peppers, cooked brown rice, heavy cream and 2% milk.
