On a recent visit, my MIL bought us a package of this, for some reason:
She loves her mixes, what can I say. Anyway, I'm a waste-not-want-not kind of person, or I try to be, so I'm making it for dinner tonight. Here's the rub: it comes in packages which contain more than enough mix for one 8x8 pan of cornbread but not enough mix for two. After using the recommend 2.5 cups of mix, there's probably a cup left over. I didn't measure wrong, I swear. For some bizarre reason, it's supposed to be this way.
Anyway, like I said, waste not, want not. Anybody have any suggestions for things to do with the leftover mix that don't require bizarre amounts of mathematical calculations for the other ingredients? I was thinking maybe cornbread-breaded catfish . . .
