I happened to be in the Denver area recently for business and had a couple of nights open for dinner in the city. I went to Zengo the first night and sampled the following:

Seared Salmon Tiradito / Piloncillo-Citrus Mustard Sauce, Soy, Wakame
Kobe Beef Tiradito / Miso Mustard, Scallions, Ponzu
Kobe Beef Gyoza / Kobe Beef, Shrimp, Red Chile, Onion, Black Vinegar-Soy Sauce
Lobster Potstickers / Lobster, Shrimp, Shitake Mushroom, Basil, Yuzu-Sake Sauce
Kobe Beef / Cooked on a Hot Stone, Wasabi Dipping Sauce
Seared Foie Gras / Oxtail Marmalade, Corn Fritter, Poached Mango, Citrus
Chocolate Bombe / Cajeta Center, Summer Berry Compote
Churros y Chai / Chocolate Chai Parfait
At first I was a bit wary of Zengo's "Latin-Asian" fusion, but overall the meal turned out quite well. I'd recommend it.
