replacing flours

i know i posted this before but didn't get any responses so i thought i'd give it another shot!

i need to come up with some recipes for desserts that have NO wheat flour. that cuts out so many wonderful desserts...but i was hoping to rather replace wheat flour with other flours...but i'm unsure of the ratios and which flours work better than others to creaate the right textures.

can anyone shed some light on wheat flour replacecments?
