Last year I made cream of turnip greens soup like a million times, and loved it so much but now I can't find the recipe I used.
I emailed a good friend about it last year and listed the ingredients (I was so proud I used up everything in my fridge).
Could anyone advise me on how to make this again? I'm kind of scratching my head looking at the ingredients.
Here's what I wrote her:
Cream of Turnip Green Soup...and it's the pinacle of "trash food" because every single ingredient (other than salt, pepper and nutmeg) was a salvage of some kind: turnip greens, (which are often embarrassingly thrown out by me), two purple baby carrots left over from camp snack from yesterday, leftover brown rice from take out last week, a half onion starting to dry out, a half shallot starting to dry out and a bunch of green onions from gods knows when and which I had to peel off the outer layer and cut off the tops, some wilty kale, leftover butter that I took home from a morning meeting where there were bagels, a tiny bit of cream left at the bottom of the carton (after having made strawberries and cream pops) and of course, the stock itself which was the usual odds and ends bones and onion/carrot skins, etc).
So did I just sautee the onion-y things with the carrot in butter, add the stock, greens and rice at the same time, puree and add cream, nutmeg and salt and pepper?
