Reliable liver recipes

I like the taste of liver and am of the opinion that it is highly nutritious. So I'd like to start cooking it at home again.

In the past, I would prepare a simple recipe for pan fried calf's liver. One out of every five times or so, it would turn out wonderful. the other times, it would always be soggy and unpleasant. i blame poor technique or inattention on my own part rather than blaming the recipe, but I think I want to try something different with liver.

I've also made the Barefoot Confessa's chopped liver recipe. Two out of three times it turned out amazing, the third time it was somewhat unpleasantly bitter. I might have burnt something.

Anyway, what are some liver recipes that are delicious and hard to screw up?

can be beef liver, chicken liver, lamb liver, whatever.
