Reims/Epernay/Paris from 1-oct through 12-oct: dinner and must-dos appreciated!

Bonjour mes amis d'experts! My husband and I are headed to France for our anniversary. We have already secured dinners at Goust on 10-Oct (to celebrate the big night) and Spring on 4-Oct. We are staying in the Marais. I speak French poorly and the hubs hardly speaks it at all. So our thought for dinner is to book reservations vs. do walk-ins, and try to find places that are open to English (although I will attempt to "parlay")...

Originally I was going to try for Bones (although earliest day we can try to request a reservation is the day we leave for our trip, and they only accept reservations via phone), Septime (although recent reviews indicated not worth the trouble?).

I will be culling through and to assemble our day-to-day dinner plans and will circle back with you amazing people to do a final confirmation of our plans once I have things narrowed.

While this is in process, a few questions:

1) Any absolutely divine discoveries that we must try in Epernay/Reims? We don't have any reservations at the houses yet (working on it) but would love any recos of smaller can't miss experiences. (either bubbly or dinner) We do have reservations at Le Jardin les Crayères.

2) We are huge lovers of what in the states is known as mixology-style cocktails. We are considering: Little Red Door, L'Experimental Cocktail Club, and/or Le Barav (which we were thinking about trying on our first night in the city as we settle in). Thoughts?

3) We would LOVE recommendations on fantastic wine bars. Especially those that do flights or pairings (or are just awesome in general).

4) What is the though on restaurants that do walk-in only? I had considered L'Avant Comptoir tapas bar but recent meh reviews. What say you?

5) Best place to get incredible seafood (oysters, seafood platters, etc.)?

That's it for now - I must do my homework of culling through the previous Chowhound posts, but appreciate any insights!
