Reheat roast vegetables in slow cooker?

For a work potluck next week, I am thinking of taking a roast vegetable "hash" based on a Food and Wine recipe. It is cubed sweet potatoes, white potatoes, carrots, brussels sprouts, and caramelized onions that have been tossed in oil and roast together until browned and soft.

I do not believe my coworkers would enjoy this cold with a vinaigrette, and I cannot reheat it in an oven as I would at home (and as the original recipe suggests for serving). I am thinking about roasting it the night before and reheating it in an otherwise-dry slow cooker at the office that morning. Do you think this would lead to an acceptable finished product, or do you have other suggestions on how to reheat it? I suppose I could microwave it, but I don't think that would be any better.

I appreciate your kind suggestions.
