Regional Cuisine Before Chile Peppers

Are there any books about the cuisines of various countries/regions before Chile Peppers were brought back from South America? It's my understanding Chile's are not indiginous to the rest of the world, so they were available as an ingredient only post 1500. It would be interesting to know what Thai, Indian, Szechuan, etc. cuisines were like without "hot" dishes.
